Smoked oyster salad with tomato coulis

Add all
  • spring mix type greens sufficient qty.

  • 1

    endive separated into leaves

  • 12

    tinned smoked oysters drained

  • tomato coulis:

  • 2

    fresh tomatoes

  • 1

    clove garlic

  • 1/4 cup
    (60 mL)

    olive oil

  • 1 Tbsp.
    (15 mL)


  • 1 Tbsp.
    (15 mL)

    red wine vinegar

  • Salt and pepper to taste


In each plate, arrange 3 endive leaves in a fan.

Place a smoked oyster on each leaf.

Garnish with a little spring mix.

Purée coulis ingredients together in a blender.

Pour coulis over salad and serve.
