    boneless, skinless chicken thighs

  • 4

    boneless, skinless chicken breasts

  • spicy maple basting sauce

  • 2 Tbsp.
    (30 mL)

    extra virgin olive oil

  • 2

    garlic cloves, chopped

  • 4 Tbsp.
    (60 mL)

    chilli sauce

  • 3 Tbsp.
    (45 mL)

    maple syrup

  • 2 tsp.
    (10 mL)

    Tabasco sauce

  • 1 tsp.
    (5 mL)

    cornstarch, mixed with a little cold water

  • 2 Tbsp.
    (30 mL)

    raspberry vinegar


Preheat oven to 350°F (180°C).

In a bowl, combine all sauce ingredients. Set aside.

In a skillet over medium heat, brown chicken both sides in butter and oil.

Transfer browned chicken to a baking dish and baste with spicy maple sauce.

Bake 20 - 30 minutes, basting again during cooking.

Serve with caramelized pear halves and sweet potato wedges.
