Spicy Mini Zucchini and Tomato Gratin

Ingredients

Add all
  • 3 Tbsp.
    (45 mL)

    canola oil

  • 0.500

    jalapeno pepper, finely chopped (without seeds)

  • 6

    yellow summer squash, halved

  • 6

    green summer squash, halved

  • 0.500

    red onion, minced

  • 1

    garlic clove, chopped

  • 2

    Italian tomatoes, diced

  • salt and ground pepper, to taste

  • 1 cup
    (250 mL)

    mozzarella, grated

  • 1 cup
    (250 mL)

    swiss cheese, grated

Preparation

Preheat oven to 450°F (230°C).

In a large skillet, heat oil over medium-high heat and add vegetables except tomatoes. Sauté 2 min.

Add tomatoes and continue cooking 1 min.

Add salt and pepper.

Transfer to an ovenware dish, cover with the two cheeses and place in the oven.

Cook 6 to 8 min. or until cheese is golden and vegetables are cooked.

Serve.
