Spinach and Cherry Tomatoes Salad

Ingredients

Add all
  • Salad

  • 10 oz
    (283 g)

    baby spinach, rinsed and spun dry

  • 1 oz
    (30 g)

    black beer sausage

  • Grated 4 year-old perron cheddar to taste

  • 15

    cherry tomatoes, cut in 2

  • 1 cup
    (250 mL)

    finely chopped purple basil

  • Dressing:

  • 1/3 cup
    (80 mL)

    extra virgin olive oil

  • 1 Tbsp.
    (15 mL)

    Dijon mustard

  • 2 tsp.
    (10 mL)

    bio honey

  • 2 Tbsp.
    (30 mL)

    red lager beer

  • Salt and pepper to taste

Preparation

Dressing:

In a small bowl, whisk dressing ingredients together.

Salad:

In a large salad bowl, toss spinach, tomatoes, sausage and basil.

Add dressing and toss. Grate cheese over top and serve.
