St-Honoré Nutmeg Pancakes

Ingredients

Add all
  • 18 oz
    (510 mL)

    flour

  • 1/3 cup
    (80 mL)

    butter

  • 10 1/2 oz
    (315 g)

    st-honoré cheese, rind removed

  • 4

    egg yolks

  • salt and white pepper to taste

  • 1 pinch

    nutmeg

  • 1/4 cup
    (60 mL)

    2% milk

Preparation

Preheat oven to 375oF (190 °C).

In a food processor, mix all ingredients, except milk, together.

Chill 15 minutes in the refrigerator.

Roll dough out 1/2 in. (1 cm) thick.

Cut cakes out of dough with a cookie cutter.

Place pancakes on a baking sheet.

Score pancakes with a fork and baste with milk.

Bake until golden brown.

Serve hot.
