Steamed  monkfish fillets with Vegetables

Ingredients

Add all
  • 3 Tbsp.
    (45 mL)

    extra-virgin olive oil

  • 1

    medium onion minced

  • 1

    clove garlic chopped

  • 1/2 cup
    (125 mL)

    chopped dried tomato

  • 1

    zucchini, cubed

  • 1

    red pepper cubed

  • 1/2 cup
    (125 mL)

    black olives

  • 3/4 cup
    (190 mL)

    prepared garlic chive dressing

  • salt and pepper to taste

  • 1 lb
    (454 g)

    monkyfish fillets

  • 1/2

    lemon

Preparation

In a pan, brown vegetables in oil, add dressing and season. Cook 2 minutes.

Sprinkle fillets with lemon juice.

Place the filets on the vegetables. Cover and cook 2 to 3 minutes over medium heat.
