Tofu Almond Truffles

Ingredients

Add all
  • 6 oz
    (180 g)

    plain tofu, crumbled

  • 1/2 cup
    (125 mL)

    ground walnuts

  • 1/2 cup
    (125 mL)

    minced almonds

  • 1/2 cup
    (125 mL)

    peanut butter

  • 3/4 cup
    (190 mL)

    honey

  • 1/2 cup
    (125 mL)

    powdered milk

  • 4 Tbsp.
    (60 mL)

    lemon

  • 1 tsp.
    (5 mL)

    almond

  • To taste, apricot jelly (optional)

  • 1/2 cup
    (125 mL)

    grated coconut

Preparation

Put all ingredients in a bowl; mix until smooth.

If the mixture is too dry, add a little apricot jelly.

Shape into 2.5 cm (1") balls.

Roll each ball in grated coconut.

Store in the refrigerator.
