Ingredients

    mesclun

  • 2

    ripe tomatoes, cut into wedges

  • 2

    ripe peaches, peeled, pitted and cubed

  • 1

    medium white onion, sliced fine and separated into rings

  • 1/2 cup
    (125 mL)

    cubed semi-soft raw or pasteurized milk cheese like gouda, oka, etc.

  • 1/2 cup
    (125 mL)

    minced fresh basil

  • Dressing:

  • 1/2 cup
    (125 mL)

    mezzo olive oil

  • 6 Tbsp.
    (90 mL)

    white wine vinegar

  • 1 Tbsp.
    (15 mL)

    Dijon mustard

  • 1 Tbsp.
    (15 mL)

    orange marmalade

  • 1

    shallot, minced

  • 0.500

    red sweet pepper, chopped

Preparation

In a salad bowl, toss mesclun with tomatoes, peaches, onion rings and cheese.

Sprinkle with chopped basil.

Mix dressing ingredients together and pour over salad.
