    Savoura large tomatoes

  • 4

    bocconcini cheese finely diced

  • salt & pepper to taste

  • extra virgin olive oil

  • 1 to 2 tsp.
    (5-10 mL)

    balsamic vinegar

  • fresh basil - chopped to taste


Combine oil, vinegar, and basil.

Seed and finely dice tomatoes.

Combine tomatoes, diced bocconcini, and marinade in a bowl.

Salt and pepper to taste.

Mould mixture in ramekins and turn out onto plates.

Drizzle with olive oil and a few drops of balsamic vinegar.
