Tortellini and Rosy Red Pepper Sauce

  • 1 Tbsp.
    (15 mL)

    olive oil

  • 1

    onion, chopped

  • 2

    cloves garlic, chopped

  • 4

    red peppers, in strips

  • 28 oz
    (796 mL)

    canned diced italian tomatoes

  • Salt and pepper to taste

  • 1 cup
    (250 mL)

    15 % cream

  • Suff. Qty fresh pasta tortellini


In a pan, melt butter in oil. Gently brown onion, garlic and peppers 5 to 6 minutes. Add tomatoes, salt, pepper.

Simmer 10 minutes.

Purée in food processor until smooth.

Reheat sauce and add cream. Simmer 2 minutes. Adjust seasoning.

Stir in tortellini into the sauce and mix.
