Ingredients

Add all
  • 2 tsp.
    (10 mL)

    Dijon mustard

  • 1 Tbsp.
    (15 mL)

    canola oil

  • 2

    garlic cloves, minced

  • 1

    lemon, juiced

  • 1

    avocado, diced

  • 2 Tbsp.
    (30 mL)

    mixed nuts

  • 4 cups
    (1 L)

    cooked chickpeas

  • 8 cups
    (2 L)

    mesclun

  • 1/2 cup
    (125 mL)

    shredded mozzarella

Preparation

In a bowl, mix Dijon mustard, canola oil, minced garlic and lemon juice together and set aside.

In a salad bowl, combine avocado, nuts, chickpeas and mesclun.

Add dressing and toss.

Sprinkle grated cheese over top.

Serve and enjoy.
