Ingredients

Add all
  • 1 lb
    (454 g)

    dried yellow peas

  • 2 Tbsp.
    (30 mL)

    butter

  • 1

    large onion, chopped

  • 3

    cloves garlic, chopped

  • 1/4 cup
    (60 mL)

    chopped leeks, white part only

  • 1/2 cup
    (125 mL)

    finely diced carrots

  • 1/2 cup
    (125 mL)

    finely diced celery

  • 8 cups
    (2 L)

    chicken broth

  • 1 lb
    (454 g)

    salt pork, diced small

  • 2

    bay

  • 1 tsp.
    (5 mL)

    savory

  • 2 Tbsp.
    (30 mL)

    chopped fresh parsley

  • pepper to taste

Preparation

Rinse peas and soak overnight. Drain and set aside.

In a pot, heat butter and cook onion, garlic and leeks. Add carrots and celery and cook another 2 min.

Add peas, chicken broth, salt pork, bay leaves and savory.

Bring to a boil.

Reduce heat and simmer covered for about 75 min.

Remove bay leaves and add parsley.

Stir and adjust seasoning.
