Turkey Sandwich with Fall Relish

Ingredients

Add all
  • relish

  • 1/4 cup
    (60 mL)

    pimento, drained and diced

  • 1/2 cup
    (125 mL)

    corn kernels, cooked

  • 2 tsp.
    (10 mL)

    olive oil

  • 3/4 cup
    (190 mL)

    green cabbage, sliced very thinly

  • 3 Tbsp.
    (45 mL)

    light mayonnaise

  • 1 1/2 tsp.

    cider vinegar

  • 1 pinch

    sugar

  • Salt and freshly ground pepper to taste

  • 4

    crusty rolls, halved

  • 160 g

    sliced swiss cheese

  • 2 1/2 cups
    (625 mL)

    cooked turkey, diced

Preparation

In a bowl, combine all the ingredients for the relish and refrigerate.

Divide the swiss cheese slices among the bottom halves of the rolls, cover with relish and top with the turkey.

Close the sandwiches, wrap each one tightly, pressing as you wrap, and refrigerate at least 2 hours.

Kid tip

Cooked turkey freezes very well. You can dice it in advance and seal it in freezer bags, for use when you need it.
