Vegetable, Clementine and Tofu Stir-fry

Ingredients

Add all
  • 1 lb
    (450 g)

    herb tofu, cubed

  • 2 Tbsp.
    (30 mL)

    light Tamari sauce

  • 2 Tbsp.
    (30 mL)

    canola oil

  • 2 cups
    (500 mL)

    broccoli florets

  • 2 cups
    (500 mL)

    mung bean sprouts

  • 1 cup
    (250 mL)

    snow peas

  • 1

    red pepper, cut into strips

  • 6

    clementines, separated into supremes

  • 1 Tbsp.
    (15 mL)

    sesame seeds

  • 1 cup
    (250 mL)

    cooked brown rice vermicelli

Preparation

Marinate cubed tofu in tamari sauce for 10 minutes or so.

Heat oil in a wok or skillet.

Brown tofu cubes.

Add vegetables and cook over medium heat for 10 minutes.

Add clementines two minutes before the end.

Serve over rice vermicelli.

Sprinkle with sesame seeds and serve.
