Watercress and tomatoes with Goat Cheese and Basil

    fresh cress

    tomatoes, sliced

  • 3 oz
    (90 g)

    mild firm goat cheese

  • 12

    greek olives

  • basil dressing:

  • 1 Tbsp.
    (15 mL)

    red wine vinegar

  • 1/4 cup
    (60 mL)

    extra virgin olive oil

  • 1/3 cup
    (80 mL)

    chopped fresh basil

  • To taste pepper


Arrange the cress on a large plate.

Cover the cress with tomato slices.

Crumble cheese over the tomatoes and garnish with olives.

Drizzle with dressing and serve immediately
