Watercress Salad with Raspberry Dressing

  • 2 Tbsp.
    (30 mL)

    light mayonnaise

  • 1 Tbsp.
    (15 mL)

    raspberry vinegar

  • Salt to taste

  • 1 tsp.
    (5 mL)

    pink pepper

  • Garnish with raspberry

  • Garnish with caramelized apples


Wash watercress under cold running water, cutting off large stems. Spin and pat dry. Divide watercress among 4 plates.

In a small bowl, whisk mayonnaise and raspberry vinegar together. Salt to taste. Pour over watercress.

Sprinkle with pink pepper.
