White Maple Butter

Ingredients

Add all
  • 1/3 cup
    (80 mL)

    water

  • 1/3 cup
    (80 mL)

    white wine vinegar

  • 1 cup
    (250 mL)

    chopped scallions

  • 1/2 cup
    (125 mL)

    cream 35%

  • 1 1/2 cups
    (375 mL)

    butter melted

  • 1/4 cup
    (60 mL)

    Maple syrup

  • salt and pepper

Preparation

Place the water, vinegar and scallions in a pan and reduce on a low heat until the mixture has the consistence of marmalade.

Add the cream and let it simmer several moments. Add curls of cold butter, whipping until the mixture is homogeneous.

Add salt, pepper and the maple syrup.

Serve very chilled or at room temperature. Can be frozen.
