    (450 g)

    québec yukon gold potatoes, washed but not peeled

  • 1

    omega-3 egg

  • 2 Tbsp.
    (30 mL)

    whole-wheat flour

  • 1 tsp.
    (5 mL)

    baking powder

  • 1 tsp.
    (5 mL)

    cinnamon (optional)

  • 1/4 tsp.
    (1 mL)


  • 1/4 cup
    (60 mL)

    organic canola oil


Grate potatoes with peel on. Put in a sieve and press to remove as much water as possible. Set aside.

Beat egg and add flour, cinnamon, and salt. Add grated potatoes and mix well.

Heat a non-stick frying pan on medium. Add canola oil.

Split the dough into 12 pancakes and place into hot pan. Flatten slightly.

Cook for approximately 5 minutes on each side, or until pancakes are golden brown. Serve with non-fat sour cream or applesauce.
