Ingredients

Add all
  • 6

    egg yolks

  • 3 Tbsp.
    (45 mL)

    sugar

  • 3/4 cup
    (190 mL)

    dry white wine

  • 1 tsp.
    (5 mL)

    lemon or orange zest

Preparation

In a bowl, whisk egg yolks until pale and creamy.

Whisk in sugar gradually until mixture is frothy.

Transfer to a double boiler and cook about 5 minutes over simmering (not boiling) water.

Add wine in a thin stream, whisking constantly.

Add zest and continue cooking until custard is thick and doubles in volume.

Spoon into stemmed glasses and serve warm.
