Combine fennel seeds, garlic, olive oil, lemon thyme, orange zest, saffron and Espelette chili pepper.Transfer to an airtight container.Add the cubes of anglerfish and marinate in the refrigerator for 12 hours.After marinating, remove the cubes of anglerfish and skiver them on the 4 skewers.Preheat the grill to high heat.Lightly oil the grill.Place the brochettes on the grill, season with fleur de sel and cook for 5 minutes on one side.Turn the brochettes over, brush with marinade, season again and cook another 5 minutes.Remove from grill and set aside on a platter.Serve the vegetable brochettes and tzatziki sauce.

Preparation

Combine fennel seeds, garlic, olive oil, lemon thyme, orange zest, saffron and Espelette chili pepper.

Transfer to an airtight container.

Add the cubes of anglerfish and marinate in the refrigerator for 12 hours.

After marinating, remove the cubes of anglerfish and skiver them on the 4 skewers.

Preheat the grill to high heat.

Lightly oil the grill.

Place the brochettes on the grill, season with fleur de sel and cook for 5 minutes on one side.

Turn the brochettes over, brush with marinade, season again and cook another 5 minutes.

Remove from grill and set aside on a platter.
