Tuber vegetables
The tuber is the
enlarged tip of an underground stem (rhizome). The plant uses this
tip to store food. Tuber vegetables, like the yam, the manioc, the sweet potato, the potato and the underestimated Jerusalem artichoke, have long served and still serve as a staple in many regional cuisines. Indeed, they are generally very inexpensive and have that “stick to your ribs” quality about them. They are rich in carbohydrates, very versatile and serve to generously fill the plates of the most ravenous appetites.
