Preheat oven to 375 °F/190 °C.Stuff chicken's cavity with lemon and basil. Season skin with salt and pepper.In a roasting pan, heat butter over medium heat and cook shallots for 1 minute. Add chicken and brown on all sides, about 5 minutes.Add remaining ingredients. Note: Add just enough milk and broth to fill pan 1 in. (2.5 cm) deep.Roast 90 minutes or until meat thermometer inserted in chicken reads 170 °F/77 °C. aste often with gravy.Serve with gravy and puréed squash.
