For the squash puree:Preheat the oven t0 400°F.Line a baking sheet with parchment paper. Add the squash on the baking sheet. Drizzle the olive oil on the squash. Bake for 30 minutes.Put the squash in a food processor. Add the maple syrup. Add some olive oil. Season with salt and pepper. Pulse until you get a puree and set aside.For the caramelized onions:Add a bit oil in a pan and cook the onions on medium for 5 minutes. Add the water and cook for another 10 minutes. Add the maple syrup, thyme, pecans, and season. Cook for another 2 minutes. Set aside.Assembly:Spread the squash puree on the bottom bun. Add the caramelized onions on top. Preparation

For the squash puree:

Preheat the oven t0 400°F.

Line a baking sheet with parchment paper. Add the squash on the baking sheet. Drizzle the olive oil on the squash. Bake for 30 minutes.

Put the squash in a food processor. Add the maple syrup. Add some olive oil. Season with salt and pepper. Pulse until you get a puree and set aside.

For the caramelized onions:

Add a bit oil in a pan and cook the onions on medium for 5 minutes. Add the water and cook for another 10 minutes. Add the maple syrup, thyme, pecans, and season. Cook for another 2 minutes. Set aside.

Assembly:

Spread the squash puree on the bottom bun. Add the caramelized onions on top. Add the crumbled goat cheese.
