Preheat oven to 400°F (200°C). In a bowl, combine ground pork with remaining ingredients except cranberry sauce and Parmesan. Season. Shape into 2-in. (5-cm) patties and put a little cranberry sauce in the centre of each. Fold the sides up and over into a ball. Roll the balls in Parmesan and place on a cookie sheet lined with parchment paper. Cook meatballs for 12 - 15 minutes. Serve with homemade or store-bought Dijonnaise for dipping.

    ground Québec pork
