Preheat oven to 400°F (200°C).In a bowl, combine ground pork with remaining ingredients except cranberry sauce and Parmesan. Season.Shape into 2-in. (5-cm) patties and put a little cranberry sauce in the centre of each.Fold the sides up and over into a ball.Roll the balls in Parmesan and place on a cookie sheet lined with parchment paper.Cook meatballs for 12 - 15 minutes.Serve with homemade or store-bought Dijonnaise for dipping.
