In a heavy bottom pot over medium heat add the olive oil & ground beef. Season generously with salt & pepper. Cook until the beef has browned, about 5 minutes.Add the onion, celery, pepper & jalapeno. Cook until the vegetables begin to soften, about 5 minutes.Add the beans, tomatoes, stock, chili powder, cumin, oregano, salt & pepper. Stir until com-bined. Bring to a boil & immediately reduce to a low simmer.Cover with lid & simmer for 1 1/2 to 2 hours, until chili has thickened.Serve with cheddar cheese and corn chips.

Preparation
