Blanch, peel and seed the tomatoes. Cut into dice. Brown the shallots and garlic in the oil. Add the peppers, tomatoes and herbs.
Simmer for 5 minutes. Season to taste. Set aside the tomatoes concassé (chopped tomato mixture).
In a double boiler, place the turkey fillets on a perforated rack. Top the fillets with a little tomato mixture.
Cook for 5 to 7 minutes. Serve the fillets, adding some of the tomato mixture.
