In a pan, cover pricked sausages with water; simmer over low heat about 10 minutes to degrease. Drain. In a frying pan, heat 30 mL (2 Tbsp.) oil; brown sausages until golden brown, about 3 to 4 minutes. Set aside. In the same pan, heat the rest of the oil and brown onions. Add rice and cook without browning. Add chicken broth. Cover and simmer over low heat about 15 minutes. Add oranges, olives and reserved sausages; reheat.
