Preheat oven to 350°F (180°C).In a bowl, combine all sauce ingredients. Set aside.In a skillet over medium heat, brown chicken both sides in butter and oil.Transfer browned chicken to a baking dish and baste with spicy maple sauce.Bake 20 - 30 minutes, basting again during cooking.Serve with caramelized pear halves and sweet potato wedges.
