Preheat oven to 350°F (180°C). In a bowl, combine all sauce ingredients. Set aside. In a skillet over medium heat, brown chicken both sides in butter and oil. Transfer browned chicken to a baking dish and baste with spicy maple sauce. Bake 20 - 30 minutes, basting again during cooking. Serve with caramelized pear halves and sweet potato wedges.
