Involtinis: Preheat oven to 350°F (180°C). Put involtinis on a parchment-lined baking sheet and bake 15 minutes.Pan-fried tomatoes: Heat oil in a skillet over medium heat and sweat shallot and garlic uncovered.Add tomatoes and capers, and cook until tomatoes are slightly softened.Remove from heat.Add herbs and season to taste.Serve involtinis with tomatoes and olive and roasted garlic mashed potatoes.
