Blend olive oil, cider vinegar and Dijon mustard in a large bowl.
Add salt, pepper and lemon juice.
Peel the apples, quarter, core and slice in thin strips.
In a large bowl, put, apples, celery and cheddar cheese.
Mix well with dressing.
Spoon salad on the lettuce, top with pecans.
These wines or ciders stand out with their sugar content. Usually semi-dry or semi-sweet, they are characterised by notes of ripe fruit.
