Dressing: Blend olive oil, cider vinegar and Dijon mustard in a large bowl. Add salt, pepper and lemon juice. Peel the apples, quarter, core and slice in thin strips. In a large bowl, put, apples, celery and cheddar cheese. Mix well with dressing. Spoon salad on the lettuce, top with pecans.

    extra virgin olive oil
  • 2 Tbsp.
    (30 mL)
    cider vinegar
  • 1 Tbsp.
    (15 mL)
    Dijon mustard
  • 2

  • 2
    Yellow Delicious apples

  • To taste salt, pepper
  • 1 Tbsp.
    (15 mL)
    lemon juice
  • 4
    celery minced
  • 1 cup
