Pour cream into a saucepan and sprinkle evenly with gelatin; let sit for 5 minutes.Heat cream over medium heat stirring frequently until gelatin has melted, about 5 minutes. Pour mixture through a sieve into a large bowl and let cool 2 minutes.Whisk in yogurt and pour into 6 (1/2 cup) ramekins or bowls.Chill panna cotta uncovered about 1 hr to set.Meanwhile to make the stewed honey apricots, place apricots, water, honey, thyme leaves and cinnamon in a small saucepan. Simmer uncovered for about 1 hr until apricots are soft and liquid is syrupy.To unmold panna cotta, dip bowls in hot water for 20 seconds and place upside down on a plate to release.Serve with stewed honey apricots and a sprinkling of toasted almonds.Source: Metro
