    • Minced shallots (3 Tbsp. - 45 mL)
    • Red wine vinegar (1/2 cup - 125 mL)
    • Ground pepper (to taste)
    • Salt (pinch)
  • CHIVE BUTTER AND PROSCIUTTO

    • Unsalted butter  (1/3 cup - 85 mL)
    • Fresh chives(2 Tbsp. - 30 mL)
    • Grated parmesan cheese (1/3 cup + 2 Tbsp. - 115 mL)
    • Chopped cooked prosciutto (1/3 cup - 85 mL)
    5 minutes broiled in the oven
  • Asian-style

    • Grated ginger (1 1/2 tsp. - 7.5 mL)
    • Green onion(1 chopped)
    • Fresh coriander (1 Tbsp. - 15 mL, chopped)
    • Lime juice (2 Tbsp. - 30 mL)
    • Rice vinegar (3 Tbsp. - 45 mL)
    • Sugar (pinch)
  • COCKTAIL SAUCE AND HORSERADISH

    • Chili sauce (1/3 cup - 85 mL)
    • Worcestershire sauce (2 tsp. - 10 mL)
    • Grated horseradish (2 tsp. - 10 mL)
    • Lime juice (1 tsp. - 5 mL)
    • Tabasco (a few drops, to taste)
