In a small bowl, mix dressing ingredients together. Set aside. In a large bowl, mix vegetables and apples together. Pour dressing over them, stirring to coat everything, and let stand at least 2 hours at room temperature. Serve on toasted slices of baguette.

  • Dressing:

  • 1/4 cup
    (60 mL)
    olive oil
  • 2 Tbsp.
    (30 mL)
    cider vinegar
  • 2 Tbsp.
    (30 mL)
    apple jelly
  • 3 Tbsp.
    (45 mL)
    chopped fresh coriander
  • 3
    garlic cloves, minced

  • Salt and pepper to taste
