Preheat oven to 400°F (200°C).Put flour, baking powder, salt and baking soda in the food processor and pulse to combine.Add butter and pulse until mixture resembles coarse crumbs.Transfer mixture to a large bowl and stir in buttermilk and cinnamon just until moistened. Add diced apples and grated cheese and knead gently to mix in (6-7 at most or the dough will be tough).On a floured surface, roll out dough about 1-in. (2.5-cm) thick.Cut dough into 2-in. (5-cm) diameter circles and transfer to a baking sheet lined with parchment paper.Brush scones with milk and bake 20 minutes or until golden brown.Cool scones before serving.

Preparation
