In a frying pan, melt the butter over medium high heat. Sauté the mushrooms and leek 2 min. Add the potatoes and continue cooking 30 secs. Add the wine and consommé, cover and cook over medium heat to evaporate all liquid. Divide in four portions and serve with the rack of pork.
