To remove excess salt, soak Feta in water for 1 hour before preparing recipe.
Drain Feta well and crumble into a bowl. Stir in Ricotta, chives and pepper. To make cheese mixture stiffer, freeze for about 30 minutes.
Roll cheese mixture into marble-sized balls.
Rolls balls in various coatings, as you wish. Arrange on a serving platter and refrigerate until serving time.
Instead of chives, use chopped fresh basil or mint, or finely chopped shallots.
For a change of taste, try with Canadian Havarti instead of Feta.
