Croquettes: In a frying pan, brown onion and celery in oil and butter 3 to 4 minutes. Cool in a bowl. Add remaining ingredients to bowl. Blend well and shape into croquettes. Fry croquettes in oil and butter about 3 minutes per side. Sauce: Boil chicken bouillon about 5 minutes. Add cream, mustard and pepper. Bring to a boil and remove from heat. Pour sauce over the croquettes.
