In a large pot, melt butter and soften the onions for 5-10 minutes.Season with salt and pepper.Add the curry powder, garlic, and ginger.Cook for 2 minutes.Add the tomato paste and the peanut butter.Mix well.Add water and bring to a boil.Add the chicken and chickpeas, and cook on low heat for 15 minutes, or until the chicken is cooked.Add the green onions and parsley, and serve atop basmati rice.

Preparation

In a large pot, melt butter and soften the onions for 5-10 minutes.

Season with salt and pepper.

Add the curry powder, garlic, and ginger.

Cook for 2 minutes.

Add the tomato paste and the peanut butter.

Mix well.

Add water and bring to a boil.

Add the chicken and chickpeas, and cook on low heat for 15 minutes, or until the chicken is cooked.

Add the green onions and parsley, and serve atop basmati rice.
