Preheat the oven to 350°F (180°C). Brush the rack of lamb with mustard. Mix breadcrumbs with parsley and garlic; coat the meat with this mixture and put in a roasting pan. Sprinkle with melted butter. Roast 45 minutes to 1 hour, or until cooked to taste. Transfer rack of lamb to a serving platter and keep hot. Pour the beef consommé into roasting pan: over high heat, deglaze with a few minutes.
