In a big pot, heat oil and cook leek and onion for 3 min. Add potatoes, broccoli, cauliflower and vegetable broth. Bring to a boil. Cook uncovered over medium heat for 25 min.
Purée in a blender for smooth consistency and return to pot.
Add cream and season. Cook a little longer to heat through.
Garnish with croutons and cheese just before serving.
