In a pot of boiling salted water, blanch sweet potatoes for 4 - 6 minutes. Drain and cool.In a bowl, whisk yogurt, Dijon mustard, vinegar, salt and pepper together.Gradually add oil, whisking vigorously.Add dressing and chives to sweet potatoes. Toss to coat evenly.Adjust seasoning. Cover and refrigerate until it's time to serve
