Preheat oven to 500°F / 260°C.Slice bagels in two horizontally. If necessary, enlarge centre hole so that it measures at least 1" (2.5 cm) in diameter.Spread butter or margarine on split bagels.Place bagels, cut-side up on a greased baking sheet.Broil for 2 minutes or until bagels are golden-brown.Lower oven temperature to 350°F / 180°C.Turn bagels over and break an egg into the centre of each one.Sprinkle with grated mozzarella, red and green peppers, salt and pepper.Bake at 350°F / 180°C for 12-15 minutes or until egg whites are firm, but yolks still runny.
