Preheat oven to 500°F / 260°C.
Slice bagels in two horizontally. If necessary, enlarge centre hole so that it measures at least 1" (2.5 cm) in diameter.
Spread butter or margarine on split bagels.
Place bagels, cut-side up on a greased baking sheet.
Broil for 2 minutes or until bagels are golden-brown.
Lower oven temperature to 350°F / 180°C.
Turn bagels over and break an egg into the centre of each one.
Sprinkle with grated mozzarella, red and green peppers, salt and pepper.
Bake at 350°F / 180°C for 12-15 minutes or until egg whites are firm, but yolks still runny.
These dry, more delicate wines stand out with their pale colour, simple fruit aromas, and the sensation of freshness their acidity brings forth.
