Preheat oven to 350°F (180°C).In a large skillet, heat oil and brown onion and garlic. Add meat and cook thoroughly. Mix in 1 cup (250 mL) salsa, lime juice, coriander, salt and pepper.Spoon mixture onto tortillas, top with cheese, reserving 1 cup (250 mL), and roll up tortillas.Put tortillas in a baking dish.Sprinkle with remaining cheese and sliced olives.Bake about 15 min. Finally, brown cheese under the broiler for a few minutes.Spoon remaining salsa over enchiladas before serving.
