Preheat the oven to 375°F / 190°C.
Butter a cookie sheet.
Place a sheet of filo dough on it, and brush lightly with butter.
Sprinkle with the Parmesan.
Repeat this with the other sheets of dough.
Salt and pepper.
Sprinkle the Emmental cheese on top.
Place the vegetables on the cheese.
Cook for 30 to 35 minutes.
Garnish with basil leaves and olives.
