In a pot over medium heat, cook apples, sugar and water for 10 minutes or until apples are tender.Drain and let cool.In a large bowl, let ice cream soften for about 20 minutes at room temperature.Then work ice cream with a fork until soft.Add spices and apples and mix well.Scoop ice-cream mix into 8 popsicle molds, pierce each with a stick and place in freezer for 1 hour until hardened.Unmold popsicles by dipping briefly in a bowl of hot water, then immediately roll each in graham cracker crumbs.Place pops in a re-sealable container using wax or parchment paper to separate each.Keep frozen until ready to serve.
