In a saucepan, heat 1 Tbsp. (15 mL) oil over low heat, cook garlic 1 minute without browning. Add carrot, cook 2 minutes more. Add tomatoes and thyme and simmer 8 to 10 minutes. Stir in salt, pepper, basil and oregano. Pour into a baking dish.
