In a large pan, heat oil over high heat and brown pork for 2 minutes on each side. Season generously.Add vegetables and continue cooking for 3 to 4 minutes.Deglaze with vinaigrette and cook for two more minutes.Cut French bread in two, lengthwise, without cutting all the way through. Open, spread tapenade and top each sandwich with 1/4 of the ingredients. Close each sandwich.Heat sandwiches in the oven for 5 minutes and serve immediately with fries and crudités.
