Preparation
Preheat the BBQ or grill pan to high.
Mix 1/4 of the olive oil and the juice of 1/2 the lemon.
Add pork cutlets to the olive oil and lemon juice, marinate for for about 5 minutes then drain
Grill the cutlets for about 2 minutes on each side, or until cooked through.
Cut the romaine in half lengthwise and season with another 1/4 of the olive oil and remaining lemon.
Grill for 1-2 minutes.
Grill the burger buns if desired.
Slice the tomato.
Finely chop the pickles to form a relish.
Divide grilled cutlets on the buns and garnish with cheese, tomatoes, pickle relish, and guacamole.
Salad dressing:
Mince garlic.
Combine garlic, mustard, vinegar, remaining olive oil, mayonnaise, and salt and pepper to taste.
Drizzle over grilled romaine lettuce, garish with parmesan.
Serve with pork burgers.
