Preheat oven to 325°F / 160°C.
Cut diamond pattern into fat covering the ham.
Put ham in roaster, add apple juice, cover and bake for 1 hour.
Mix maple syrup, mustard and water together in a bowl.
Take ham out of oven, stick a clove into each diamond and baste with maple syrup mixture.
Continue baking for 60-90 minutes, basting frequently.
These light wines are characterised by their simple fruity aromas, the sensation of freshness they leave, and their unassuming structure. They must be consumed young.
