In a deep fryer, heat oil to 340°F (170°C).Cut potatoes into matchsticks about 1/4 in. (1/2 cm) thick.Soak potatoes in cold water for 10 minutes.Drain and pat dry (potatoes must be perfectly dry to prevent spattering).Place matchsticks in fryer basket; make sure that the basket doesn't overflow.Immerse in oil and fry 10 minutes or until golden brown.Place fried straws on paper towels and blot excess oil.For oven friesPreheat oven to 450°F (230°C).Spread matchsticks on a baking sheet, coat with 2 tsp. Preparation
